  • 2 tablespoons vegetable oil
  • 1 tablespoon unsalted butter
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1.1 pounds boneless skinless chicken breast cut into 1/2 inch cubes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup all purpose flour
  • 1 cup whole milk
  • 2 cups vegetable broth
  • 1 cup jasmine rice rinsed and drained
  • 1 medium zucchini diced or coarsely grated and squeezed of excess liquid
  • 1/4 cup chopped fresh parsley
  • 1/2 cup shredded cheese such as Gouda or Cheddar optional

Method
 

  1. Heat the oil and butter in a large deep skillet or wide pot over medium heat.
  2. Add the chopped onion and cook for 3 minutes, stirring, until soft and translucent.
  3. Add the minced garlic and cook for 30 seconds until fragrant, stirring constantly.
  4. Add the diced chicken, season with the salt and black pepper, stir, and cook for 3 minutes until lightly browned on the outside.
  5. Sprinkle the flour evenly over the chicken and cook for 1 minute, stirring, until the flour coats the meat and absorbs the juices.
  6. Slowly pour in the milk while stirring constantly to form a smooth sauce with no lumps.
  7. Add the vegetable broth, stir well, and bring the mixture to a gentle boil.
  8. Stir in the rinsed jasmine rice, reduce the heat to low, cover with a lid, and cook for 15 minutes without lifting the lid.
  9. After 15 minutes, uncover, add the zucchini and chopped parsley, and gently stir everything together.
  10. Taste and adjust seasoning with additional salt and pepper if needed.
  11. If using cheese, sprinkle it over the top, cover for 2 to 3 minutes off the heat until the cheese melts.
  12. Serve hot directly from the pot.

Notes

- You can replace chicken breast with boneless skinless chicken thighs for a juicier result.
- For a vegetarian version, use firm tofu instead of chicken and vegetable broth, and simmer gently to avoid breaking the tofu.
