  • 2 lb potatoes peeled and sliced into 1/4-inch rounds
  • 4 tbsp olive oil
  • 4 cloves garlic finely minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley finely chopped

Method
 

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Rinse the sliced potatoes briefly under cold water, then pat very dry with a clean towel or paper towels.
  3. In a large bowl combine olive oil, minced garlic, dried oregano, dried thyme, salt, and black pepper.
  4. Add the potato slices to the bowl and toss until all slices are evenly coated with the oil and seasoning mixture.
  5. Arrange the potatoes in a single layer on the prepared baking sheet, making sure the slices do not overlap.
  6. Bake for 25 to 30 minutes, flipping the slices halfway through, until the edges are golden brown and the centers are tender.
  7. Remove the potatoes from the oven and immediately sprinkle with chopped fresh parsley.
  8. Serve hot as a side dish or snack.

Notes

- Make sure the potato slices are well dried before coating with oil to help them crisp.
- Do not overcrowd the baking sheet; use two sheets if needed for better browning.
