  • 4 large eggs
  • 2 medium cucumbers
  • 3 tablespoons mayonnaise
  • 2 tablespoons finely chopped fresh dill
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Method
 

  1. Place the eggs in a saucepan, cover with cold water, bring to a boil, then cook for 10 minutes.
  2. Drain the hot water, cover the eggs with cold water, and let them cool completely.
  3. Wash and dry the cucumbers, then dice them small or slice into thin half-moons.
  4. Peel the cooled eggs and chop them into small pieces.
  5. Add the chopped eggs and cucumbers to a medium mixing bowl.
  6. Add the mayonnaise and chopped dill to the bowl.
  7. Gently stir until the ingredients are evenly coated without mashing the eggs.
  8. Season with salt and black pepper, then stir again and taste, adjusting seasoning if needed.
  9. Cover the bowl and refrigerate the salad for 30 minutes before serving.

Notes

- For a lighter salad, replace half or all of the mayonnaise with plain yogurt.
- If your cucumbers are very watery, lightly salt them and drain for a few minutes before mixing to keep the salad from becoming too thin.
