  • 2 cups all-purpose flour
  • 1/2 cup warm water
  • 1/4 cup warm water additional
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon instant dry yeast
  • 2 tablespoons olive oil
  • 1 cup shredded yellow cheese
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs

Method
 

  1. In a medium bowl combine 1/2 cup warm water, sugar, and yeast and stir to dissolve.
  2. Let the mixture stand for 10 minutes until foamy on top.
  3. Add flour, salt, remaining 1/4 cup warm water, and olive oil to the yeast mixture.
  4. Mix with a spoon until a rough dough forms, then knead by hand or with a dough hook until smooth and elastic.
  5. Shape the dough into a ball, place it in a lightly oiled bowl, and turn to coat.
  6. Cover the bowl with a kitchen towel and let the dough rise in a warm place for 60 minutes until doubled in size.
  7. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  8. Gently punch down the risen dough and transfer it to a lightly floured work surface.
  9. Roll the dough into a rectangle about 1/4 inch thick.
  10. Sprinkle the dough evenly with shredded cheese, dried herbs, and garlic powder.
  11. Lightly press the toppings into the dough with your hands or a rolling pin.
  12. Using a sharp knife or pizza cutter, cut the dough into strips about 3/4 inch wide.
  13. Twist each strip gently a few times or leave straight, then place on the prepared baking sheet, spacing them slightly apart.
  14. Bake for 12 to 15 minutes until the breadsticks are golden and the cheese is melted and lightly browned.
  15. Transfer the baked breadsticks to a wire rack and cool for 5 to 10 minutes before serving.

Notes

- Use any semi-hard cheese such as cheddar, gouda, or edam for these breadsticks.
- If the dough feels too dry while kneading, add 1 teaspoon water at a time until it becomes soft and elastic.
