Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
- Melt the butter in a large bowl, then mix in the sugar until well blended.
- Add in the eggs one at a time, stirring in the vanilla extract as well until the mixture is creamy.
- In another bowl, whisk together the flour, cocoa powder, and salt.
- Gradually add the dry ingredients to the butter mixture, mixing gently until just combined.
- Fold in the roasted cherries with a spatula.
- Pour the batter into the prepared baking dish, spreading it evenly.
Baking
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out with just a few moist crumbs.
- Allow to cool in the pan, then slice into squares and serve while still slightly warm.

Don’t overmix the batter after adding dry ingredients to keep brownies tender. For extra richness, consider melting some dark chocolate to drizzle on top once cooled. Store leftovers in an airtight container for up to 3 days.
