Method
- Preheat the oven to 400°F.
- Pat the cod fillets dry with paper towels and check for any remaining bones. Remove bones if needed.
- Place the cod fillets in a single layer in a small baking dish. Season both sides with salt and black pepper.
- In a small saucepan over low heat melt the butter.
- Add the minced garlic to the melted butter and cook for 1 minute, stirring, until fragrant but not browned.
- Remove the saucepan from the heat and stir in the lemon juice until the butter mixture is smooth.
- Pour the hot garlic butter evenly over the cod fillets, making sure the garlic is distributed over the tops.
- Transfer the baking dish to the oven and bake for 15 to 18 minutes, until the fish is opaque, flakes easily with a fork, and the top is lightly golden.
- Remove the dish from the oven and let the fish rest for 2 minutes.
- Sprinkle the baked cod with chopped parsley, garnish with lemon slices, and serve immediately with the pan juices.
