Method
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Rinse the sliced potatoes briefly under cold water, then pat very dry with a clean towel or paper towels.
- In a large bowl combine olive oil, minced garlic, dried oregano, dried thyme, salt, and black pepper.
- Add the potato slices to the bowl and toss until all slices are evenly coated with the oil and seasoning mixture.
- Arrange the potatoes in a single layer on the prepared baking sheet, making sure the slices do not overlap.
- Bake for 25 to 30 minutes, flipping the slices halfway through, until the edges are golden brown and the centers are tender.
- Remove the potatoes from the oven and immediately sprinkle with chopped fresh parsley.
- Serve hot as a side dish or snack.
