Method
- In a medium bowl combine 1/2 cup warm water, sugar, and yeast and stir to dissolve.
- Let the mixture stand for 10 minutes until foamy on top.
- Add flour, salt, remaining 1/4 cup warm water, and olive oil to the yeast mixture.
- Mix with a spoon until a rough dough forms, then knead by hand or with a dough hook until smooth and elastic.
- Shape the dough into a ball, place it in a lightly oiled bowl, and turn to coat.
- Cover the bowl with a kitchen towel and let the dough rise in a warm place for 60 minutes until doubled in size.
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Gently punch down the risen dough and transfer it to a lightly floured work surface.
- Roll the dough into a rectangle about 1/4 inch thick.
- Sprinkle the dough evenly with shredded cheese, dried herbs, and garlic powder.
- Lightly press the toppings into the dough with your hands or a rolling pin.
- Using a sharp knife or pizza cutter, cut the dough into strips about 3/4 inch wide.
- Twist each strip gently a few times or leave straight, then place on the prepared baking sheet, spacing them slightly apart.
- Bake for 12 to 15 minutes until the breadsticks are golden and the cheese is melted and lightly browned.
- Transfer the baked breadsticks to a wire rack and cool for 5 to 10 minutes before serving.
